My kids & my hubby think I'm weird for liking it in jello. I don't think it's weird I'm sure I've seen it served that way at buffets ect plus it gives the banana's a slightly different flavor.

I don't think it's at all weird. My mother used to serve bananas in lemon jelly for birthday parties and it was always very popular. I should explain that, in England, we call fruit flavoured gelatine 'jelly'. I believe that 'Jello' is really a trade name but you use it to mean the product generally. In the old days, of course, there was no pre-packaged 'Jello' - cooks had to make gelatine from leaves or powder and flavour it with syrups.
Another good dessert is clementine/tangerine segments in orange jelly. This is very special if served with whipped cream! It's a good idea to make the dish in layers, otherwise the fruit tends to float to the top before it sets.
Almost any fruit can be moulded in this way. If you have a jelly mould, you can arrange the fruit artfully in the mould and fix it in place with the flavoured gelatine. It's a technique that was used by no less a person than Mrs Beeton! Here is a site with some marvellous ideas and recipes for 19th Century 'jellies': http://www.historicfood.com/Jellies.htm
