What do you use it for? Filipino dishes use it as a sort of condiment - something that we add after the food is cooked, and we add according to our preferences. I think it's like wasabe - we don't mix it with sushi but we put some before we eat. I especially like it with Green Mango.

Oh, we definitely have to have it with the Filipino dish, "kare-kare" -- this ox-tail stew with vegetables and peanut butter. It's also good with boiled vegetables like eggplant and okra. We saute our shrimp paste when we have it with those boiled vegetables too. HAPPY EATING! :D

Kare-kare, even if perfectly cooked would not be as good at all without Bagoong! I love it only if sauteed well. I usually saute my own, always with garlic and onions and finely chopped pork, and I have that with green mangoes. Sometimes I put Ampalaya, and have that with rice.

Well we usually saute it with pork and can already be a viand. But what I really like to use it for is when I use it as a dip when I ate green mangoes. It is just so yummy!
