Cooking with canned potatoes

A lot of people strongly dislike canned potatoes. Others only use them for frying up with eggs or in hash-type recipes. I have a few cans of sliced potatoes in the pantry cupboard because one crockpot recipe I make calls for them. However, given the rising cost of fresh produce and the fact that canned potatoes can still be purchased inexpensively, I was wondering if anyone has any good recipes that use them? What can you do with them that might alleviate what some people call "the metal taste" they seem to retain? I know the key is to drain and rinse, rinse and rinse again... but I'd be really interested in tasty recipes :) Particularly any that might include preparing them in the oven because I don't really do much "fried food". Thanks for any suggestions! :))

I have a pretty simple soup recipe that I use canned potatoes. 2 cans potatoes 2 cans stewed tomatoes 1 can carrots 1 can green beans 1 can corn 1 1/2 pound ground beef 32 oz. tomatoe juice First mix all of the ingredients except the hamburger in a big cooker or crock pot. Brown your ground beef and add it to the mixture. Season to taste. I usually cook mine on the stovetop for at least 2 hours. It's really simple to fix, and everyone seems to love it in the winter time.

Thanks very much for this, kykidd! I imagine in soups or stews, the canned potatoes would absorb the flavors and be quite tasty. I appreciate the recipe! :D
