cornish game hen

Ok I think this would go under chicken? I have no idea to be honest. I want to do something nice and make my man a nice dinner when he comes home tonight. I bought a cornish game hen. Not only do I not know what it is I don't know what I'm supposed to do with it besides cook it. Anybody have any decent recipes or side dishes that would go good with it?

A cornish hen is like a chicken. I don't know how much yours weighs, but you could check the cooking time on the net as well as tons of recipes. I love cornish hens. I would stuff it with a mixture of wild and white rice, parboiled before stuffing, rub it all over with butter and sprinkle it with paprika, set it in a baking dish and bake it until done. As a side dish I would serve green beens, steamed and dressed with toasted almond slivers, carrots also steamed, lightly buttered, sprinkled with finely chopped parsley and a green salad made with mixed baby greens and a simple raspberry vinegraite or an oil and vinegar dressing. If you only have one cornish hen the rice stuffing from the chicken may not be enough for two people so I would serve tthe rest of the cooked rice at the side. Bon appetit!

I would wash it,stuff the cavity with a bread dressing and place it in a baking dish. I would rub the skin with olive oil and then sprinkle it with sage. I would then place potatoes,carrots and onions in the pan around it.Maybe add some rosemary or thyme to the veggies. I'd then cover it with foil and bake at 350 degrees.I would on cover it after about 40 minutes to let everything get a nice brown color.
