Cheating at Potato Pancakes

I make the easiest potato pancakes, I know there are usually more ingredients but this is what I do. Take mashed potatoes, add onion and grated cheese, make into a patty and fry in lots of butter. Guess what I am making right now? How do you make your potato pancakes.

I too have made potatoe pancakes out of left over mashed potatoes. I fry mine in oil though. I put in minced onion and cheese once in a while. I have even added bacon to them once. Yum! But i do make them the old fashioned way with grating the potatoes and onions and adding in egg and flour to help bind then fry. It's okay to cheat and go easy route, it still comes out yummy!!

Same way except I use cheddar cheese and add garlic.

That sounds super easy and a good way to use up leftover mashed potatoes. I bet my kids would love them that way. The butter part sounds good to me!

When I was a youngster I'd watch my German grandma make them it's not quick and easy but this is the to do right! My opinion,and always get good comments, serve with Brats,Polish sausage, or other sausage of your choice. I take 6 or 8 med. potatoes and peel them. then grate them (the larger hole) in a bowl. use 1 med.yellow onion, peel and dice up not too small pcs. add 1 to2 table spoons flour 1 egg 1 table spoon cooking oil salt and pepper to your taste mix all in bowl on flat griddle use a little oil ( I use bacon grease when I have some) over med. to high heat 2 to 3 table spoons of mixture on to the griddle flatten and cook, this is a slow process about 2 to 3 minutes on each side. let drain on paper towel serve with sour cream salt to taste. Try em you'll love them!!! Good odd fashioned cooking!

Yes! The homemade are much much better. You can also serve with applesauce, very yummy!

Those sound really good. I made them from scratch once before, but I did not squeeze the grated potato out, so they were runny and I had to add more flour. They ended up more like regular pancakes. Good, but not quite right.
