Spices to your cooking?

Do like to add a lot of spices to your food before cooking or do you prefer to spice them afterwards?

I spice my foods when I am cooking them. The only thing I really add more of after it is done cooking is maybe salt and pepper. I add some to the food, but then if I think it needs more I will add some more to my serving.

I add spices during cooking. I am originally from Louisiana, so I like to use lots of spices when I cook. I have in my spice cabinet and regularly use (in various dishes) bay leaves, curry powder, ginger powder, cayenne pepper, cajun seasoning, chili powder, oregano, parsley, basil, and a few others. Bay leaves especially have to be added when the dish is cooking because that's what gets the flavor out of the bay leaves.

I prefer to add spices before or during cooking, I like the taste to onfuse into the chicken or whatever else I cook. I find that adding spices after can leave "hot spots" while the main ingredient is still bland and tasteless.
