Do you like this type of food? My brother really likes this type of cooking and he has been trying it out lately. The other night he made me Mushroom Etouffee for dinner. Last night was Shrimp Creole. Both turned out really good. Spicy, but really good. Do you like to cook this way? OR maybe just eat it? What is your favorite?

It is normally made with Crayfish I think, but my brother was trying out a vegetarian recipe for a girl he is seeing. It was my favorite of the 3 he cooked.

Once in a while spicy is good. Chicken and sausage jambalaya is pretty good. I haven't cooked it though. I had it at a restaurant. So I just eat it.

I do not eat seafood so my cajun is limited. But I love blackened meat and I make my own creole sauce. YUM!

That's usually spicy, isn't it? I can't handle spicy the way I used to. Gosh, I used to put hot sauce on everything! The hotter the better! Now, I can't even handle mild wings from Pizza Hut, and I used to think they were pathetic on the heat factor, lol.

I went to a Cajun restaurant once, I was not too crazy about what I ordered, but I do like cajun food, not to spicy though. I have made Jambalaya a few times, it really turned out good, I added shrimp and andoie (spelling) sausage, I enjoyed that meal, because there was plenty of leftovers, and it tasted better the next and the next day. I like onions, peppers and celery, which is called the trinity, and anything made with those ingredients as well as garlic I like.

Andouille sausage. Yeah that stuff is good. He did not have any andouille sausage, so my brother used just hot sausage in his Jambalaya last night.
