Do you like this type of food? My brother really likes this type of cooking and he has been trying it out lately. The other night he made me Mushroom Etouffee for dinner. Last night was Shrimp Creole. Both turned out really good. Spicy, but really good. Do you like to cook this way? OR maybe just eat it? What is your favorite?

Once in a while spicy is good. Chicken and sausage jambalaya is pretty good. I haven't cooked it though. I had it at a restaurant. So I just eat it.

That's usually spicy, isn't it? I can't handle spicy the way I used to. Gosh, I used to put hot sauce on everything! The hotter the better! Now, I can't even handle mild wings from Pizza Hut, and I used to think they were pathetic on the heat factor, lol.

I went to a Cajun restaurant once, I was not too crazy about what I ordered, but I do like cajun food, not to spicy though.
I have made Jambalaya a few times, it really turned out good, I added shrimp and andoie (spelling) sausage, I enjoyed that meal, because there was plenty of leftovers, and it tasted better the next and the next day.
I like onions, peppers and celery, which is called the trinity, and anything made with those ingredients as well as garlic I like.
