This morning we had "taco" omelets for breakfast

Last night we had the whole spread for taco night. We had 5 of the 6 kids and my husband and I , so we usually have to make quite a bit. We had a little bit of the seasoned meat leftover along with some cheese, chopped onions and tomatoes. I always try and make something for breakfast on the weekends but the kids got up before us so I decided to throw together an omelet with the rest of the taco ingredients. They turned out really good. I even put a little sour cream on mine. Have you ever made an omelet out of leftovers? Or do you have an unusual omelet recipe you could share?

actually no, I don't usually make omelets, I think I ate them about three times in my life.

Until I made this for my husband he had never had an omelet because he hates cheese but since it was mostly filled with meat, tomatoes and onions he didn't mind so much.

I stink at making omelets, so I usually opt for scrambled eggs instead. I mostly do plain ones with cheese, but I will sometimes add some veggies and meat. Your taco omelet sounds like it would be good. I will have to think of that next time I have leftover taco meat.

It really depends on how good your pan is. I use a big skillet that is a pain because it is starting to lose its non-stickness. They are much easier if you have a good pan.

Omelets are good especially when it is cold out because they are nice and warm. I wish my kids liked them more.
