Dinner tonight is whatever my husband gets for me. I have been banned from being in the kitchen till I feel better after my op. Last night a friend brought over a bacon & egg pie. That was yummy. May have to ask my friend to cook for me again.

We are having chilli beef stir fry tonight, with boiled rice of course. The meat is marinading at present, actually cut the meat up last night and then added the marinade, so it will be nicely flavoured. Vegetables are all set aside, ready to be cut up and then added to the stir fry when the time comes. Rice doesn't take long to cook and as it is boiled rice, so much the better. At least if our son is late, then I can reheat the rice, which is not possible it if is fried rice. Just doesn't taste the same. :)
I find that when doing stir fry that it is better to marinade the meat, whether beef, chicken or pork, for at least 12 hours before cooking, as the flavour goes right through the meat and gives it a nicer taste. Just a personal preference of mine, but others might think differently of course.

lol ossie i have just coked another stir fry i find them nice and light and really quick to prepare and all but one of the kids eat them ,It just makes meal time less of a chore and less arguements with the dishes .I marinate the meat all day also as you are right the flavours do need to go through it.

Barby at my place tonight ..... too hot to be bothered with anything else and cooking in our small kitchen is like being in the oven itself. so we are having lamb chops and steak with tossed salad (tomato, onion, lettuce, radish and cucumber) and coleslaw. mustn't forget the onions, sliced potatoes, pumpkin and eggplant that are being done on the barby plate too. best thing is no mess really and easy to clean the barby plate at the end of it.

We had tacos and taco ring tonight for dinner. We also had some left over chicken and potatoes that my daughter had made. I never serve leftovers but there was so much that I thought that I should not throw them away.
