stupid thinker, but why?

we called he/she a shopkeeper we called him goalkeeper but why we use Undertaker not underkeeper? Thanks

Cute! English makes no sense at all in many ways. If the plural of mouse is mice, why isn't the plural of house hice, etc., etc., etc. It's an amalgam of so many languages, mispronunciations that become accepted, and other nonsense, we can't begin to expect things to be consistent!

Could it be as simple as this person actually takes bodies and places them under ground. I would think a underkeeper might have something like horns or wings and tends to keep you in the afterlife.

Perhaps it is because things for which we use the suffix "keeper" have to do with keeping something a particular way such as housekeeping. These things are generally fixed and have more permanance whereas an undertaker is someone who takes a body on a very specific type of journey.
