Coconut milk for cooking

There is an African yestaurant here that serves coconut rice. I don't like coconut itself but I love this rice and soups make with coconut milk. I have seen the cans of coconut milk at the grocery store and wanted to try cooking with it at home. Is there any special techniques for using this ingredient? Does anyone have a favorite way to cook with it that is simple for fish or vegetables or rice?

Coconut milk is regularly used in cooking curry chicken, beef rendang and curry fish. I do eat them when I buy take away. But at home I do not use coconut milk when cooking curries as they are not very healthy. But using coconut milk do gives fragrance and thickens the curry. I think once in a while is okay but often is not good for eating.

Curries are unhealthy? I have never heard that before. Why is this so?

Ooopsss... I think you got me wrong here. I wrote "I do not use coconut milk when cooking curries as they are not very healthy" The they refers to the coconut milk. Too much of coconut milk taken often can increase the bad cholesterol level.

I know it can be difficult to digest but I don't think I knew about the cholesterol issue. I don't really worry about my cholesterol. The levels are extremely good.

i love my dad's fish in coconut milk dish that he made. it is easy to prapare.. you can use a white flesh fish for better taste like tilapia, tuna, or lapu lapu. then u wrap it in a banana leaves. put it in a pot along with coconut milk, vinegar and some ginger to kill the fishy taste of fish. let it simmer for few minutes. wait til the fish is cook then pinch some salt and pepper to taste and its ready to eat! bon appetit! :D

It sounds good, I will have to try it if I can find banana leaves. What else does he serve with the fish?

if you can find banana leaves, you can use pechay or Chinese cabbage as alternative.. it will make the dish healthier coz you have vegetable in your dish.. it will also add nice aroma and taste with it too.. thanks!! and enjoy eating..

I use coconut milk regualarly in soups especially. What you have to do is to add the milk at the end when the soup is ready to be served and let it heat through for a few minutes. I love it in rice too. I have never used in any form whilst preparing vegetables though. I don't have any recipes for that. I do hope that many Mylot readers will help you firther than my effore!

I will have to try adding some coconut milk the next time I make a simple clear soup. Maybe something with fish and plantains :-)

You can use it as a substitute for your liquid ingredient in most recipes, however, you will want to experiment with it before you serve it to family and friends. I had to stop using coconut in general. :( I am allergic, but I have lots of great ways to use it. If you like to make coconut cream pie, you can use the milk/juice to help give a bolder flavor in the filling. As mentioned it is great in flavoring fish. There is a wonderful recipe online for coconut chicken where it calls for the milk/juice. You will be amazed at how many ways you can use the coconut milk/juice. Lots of fun to you!

I am not a pie eater but I like the idea of using it to simmer foods and I may try substituting it for water the next time I am making rice. Is there a difference between coconut milk and juice?

I love cooking with a coconut milk because it makes the food tastier. Same with others, I use this in curry and other recipes for chicken, beef and pork. I use it also in making some desserts.
