wheres a good fun place to go to on an anniversery thats not a beach?

me and my gf's anniversery is soon and we usually go to the beach and last time it was freezing so we dont wanna go we live in florida and thought of the theme parks but is their anything else besides that we could go and do? possably stay in a hotell for the weekend?
