How do I transfer music and audio files on our ipod that is not on itunes

My husband got an ipod and he has a whole lot of audio files in mp3 plus audible on his hard drive. Could anyone help him in putting these on an ipod. How can he go ahead and do this.
Want to know because if that is successful, thinking of getting one for myself.
