I never was a chicken based meal fan. When i was younger that is. Now that I am more health concious I try to add it in many meals throughout the week. My mom used to make some awesome chicken and dumplings, but she always used the biscuit dough like pilsbury. Tonight I made it from scratch...from boiling the chicken all the way to the making the dumplings.....and it turned out great. My secret was the Campells Chicken and Herb condensed soup. Yummy. What's in your dumplings?

Where I come from we eat chicken and dumplings all the time. There are two different kinds of dumplings "drop", and "slippery." We put the drop dumplings in vegetable soup and the slippery ones in with chicken. The drop dumplings are the ones made from a dough more like a biscuit. The slippery ones are my favorite. The most important thing is to have your chicken broth flavored very well. Start with a whole chicken or chicken pieces in a large pot, add salt, pepper, plenty of fresh garlic, onions, carrots, fresh parsley and sage. Cook it until the chicken is almost falling off the bone and then take the chicken out. Strain your broth and season to taste. In a large bowl put in a couple cups of flour, add enough of the seasoned broth to make a soft dough. On a floured surface, take a handful of the dough and roll it out as thinly as you can and cut into strips, flour the surface of the strips and put in a pile until all the dough is rolled out and cut. Now add to the boiling chicken broth, reduce the heat, cover and let cook for about 20 minutes. The flour on the dough thickens up the broth a little, great for putting over potatoes. Add the chicken back in and enjoy!

The best and easiest way to make chickend dumplings is by simply boiling some chicken and make the chicken broth. in a separate plate you add one whole egg per one hundred grams of hard durum semolina and finally mix them together until you get a creamy consistency. take a fork and add to the boiling broth the newly formed cream and let them boil for a few minutes then turn off the heat. try it and let me know how it goes.
