Comfort foods for holidays...

Easter is fast approaching and some of us will be cooking our favorite meals to enjoy with our families. Most holidays seem to consist of an enormous amount of comfort foods and a very full belly. I always look forward to making my favorite recipes for my family because I truly enjoy seeing their smiles as they eat the great food. I would like to share some of my favorite recipes with everyone, although one I have already shared under the discussion Mashed Potatoes. All of my family love my mashed potatoes and cannot wait until the next holiday when I bring it. Another favorite is broccoli and rice casserole. I am not a huge rice eater but when I came across the recipe The Best Broccoli and Rice Casserole Ever, I thought I would give it a try. The ones I had tried in the past that other people had made just did not taste good to me but this one was unique. I tweeked it to make it my own and quickly it became the most requested side dish in my home. Here it is: 1 can cream of mushroom soup 1 can cream of chicken soup 1 16oz pkg slice American cheese (Deluxe brand at Wally World) 1/2 cup water 1/2 cup milk Salt & Pepper to taste 2 pkgs microwavable heat-in-bag rice 2 pkgs microwavable heat-in-bag chopped broccoli Combine first soups, water, milk, salt & pepper in mdm sauce pan on mdm heat, mix well. Cut or tear cheese into small pieces to add to mixture. Do not add all at the same time. This is the most time consuming part so be patient, it is well worth it. Keep stirring in the cheese with the soup mixture until all melted and you have a nice cheese sauce. Meanwhile prepare rice and broccoli as directed in microwave. Combine all ingredients in casserole dish, bake at 375 for 30 minutes or until top is bubbly. Remove and enjoy!! This is an awesome comfort food recipe. I never have any leftovers to take home and enjoy the next day. It makes a perfect side dish at any holiday. I will definitely be making it this Easter for my family to enjoy.
