Easy Homemade Crab Rangoons

This is another easy homemade recipe of mine. I made this one up because there was a Chinese restaurant in NY that I loved. They made the best crab rangoon's. I wanted to try to come up with a recipe that resembled their recipe, and so I tried and tried, and this was the one that came the closest. I made it for my family get together and they were a big hit! So now, I'm passing this one on to you all. I'd love to hear what you think about them. Ingredients: 1 package cream cheese (softened) 1 small container of ricotta cheese 1/4 cup of milk 1 egg 1/2 package of imitation crab meat (shredded) 1 teaspoon salt 1 teaspoon sugar 1/2 yellow onion, diced Egg Roll wrappers extra virgin olive oil In a blender combine cream cheese, ricotta cheese, and milk. Mix on high until blended. Pour into a bowl and fold in the salt, sugar and egg (do not over mix). Add crab and onions and again fold gently. Heat the olive oil in a pan on low to medium heat. Take egg roll wrappers and place a heaping spoonfull of mixture close to one side of the wrapper. Roll it once until the mixture is covered, then fold in the ends and continue to roll. (Although the shape is not important and you could fold or roll them any way you choose to include in triangles, I roll them in the shape of an egg roll). Fry them in oil until golden brown. The egg roll wrappers are very delicate so dampen a paper towel and drape it over the unused wrappers until ready to use. They also fry quickly so use low to medium heat and adjust as needed. Once you they are done cooking, place them on paper towels to remove excess oil. You can freeze the left over wrappers if you have any. Tip: Do not eat them right away...the insides stay very hot for a while. Let them cool down for a bit first. These go best dipped in sweat and sour sauce (I buy this in a jar at the super market buy you can look up recipes to make your own). Don't forget to let me know what you think!!
