Rice Pudding made without Rice ?

I just tried this recipe last night and could hardly wait
to share it with all of you. I am a type 2 diabetic and I
have been missing out on some of my favorite foods like rice pudding.
I love having a snack or a dessert after my dinner but it was getting hard
finding something new I could eat. I didn't think this would taste as good
as it said but it sure fooled me. So here it is...
The no Rice Rice Pudding
Ingredients:
* 1/2 cup finely grated (riced) RAW cauliflower
* 1/2 cup Splenda
* 1/4 cup Brown Sugar Twin
* 4 oz. cream cheese
* 2 egg yolks
* 1 cup heavy whipping cream
* 1 teaspoon vanilla extract
* 1/2 teaspoon nutmeg
* 1/8 teaspoon ground cloves
* 1/4 teaspoon cinnamon (option)
Mix 1/4 cup of cream with sweeteners, extracts, spices, and cauliflower. Heat in microwave for 1 1/2 minutes. Let stand for 15 minutes. Beat egg yolks with 1/4 cup of cream; set aside. Pour remainder of cream in sauce pan, add cream cheese and cook on medium heat, stirring constantly, until thickened. Add cauliflower mixture and egg mixture to pan and stir to re-thicken. Pour into 4 small ramekins or pudding dishes and refrigerate 1-3 hours. Serve and enjoy!
I added cinnamon, some raisins and some nuts because I like a little crunch in my "rice" pudding and cinnamon helps keep my glucose down.

This recipe sure sounds good and I will definitely try it. I do not like splenda though, so I'll probably change the sweetener to agave nectar. I know it's more calories but does not have a bad glycemic index. It is wonderful to get to use cauliflower in this way. Even though I like cauliflower anyway, I have never tried it as a desert. Thanks for sharing!
