Adding salt to the fries before they go into the oil will just break the oil down faster. If you are using a deep fryer then you should be able to reuse the oil quite a few times before having to change it to new oil.

Put a flavor on the fries and then in a pan put a cooking oil and when it will be heat enough then pour the fires on the pan but make sure that the cooking oil is in the high level from the fries that you put on the pan so that it will be evenly cook, and when it will be golden brown put the fries to a stainless drainer so that the cooking oil will not absorb to the fries which it give a good result.

I love making homemade french fries....to crisp them I do it the way mother did and double fry them....you fry them the first time, drain and cool them briefly while you wait for the oil to get hot again then you fry them again for a very short period of time....Its easy for me to do it that way since I always have to fry several batches anyway (homemade fries are a huge hit in this house so I ahve to make lots of htem LOL)

hi Archie, my dear friend, i have tried making french fries and i think i have been succesful in making crispy fries. i nake them for my hubby and my baby. they both love them a lot. i do most of the cooking just for these two. i also make cutlets and burger. becasue she has just completed her year, she cant eat too much, becasue she cant chew. so i make her hold the fry, and she keep on trying to eat. it is so cute to look at and really enjoy that sight.

Mc donalds fries aren't all that normal since they can't mold due to a research since what they use are some odd preservatives like how you see in that movie 'super size me.' But if you really want to get fries like those deep fry them in oils and for flavoring, use lots of salt when you take them out... O_o

Its pretty simple to make crispy fries. There's about 5 steps to it and the key is you have to make sure the oil is extremely hot, and you cook the fries in small batches, which keeps the oil from cooling down too much. Step 1: Cut the potatoes down to french fry size. I suggest about 1/2 inch thick and 2-3 inches long. Step 2: Fill a large bowl with water and about 2 tablespoons of salt. Place the french fries in the water and allow them to soak for at least 15 minutes. *Using the water to dissolve the salt in will cut down on any possibilities of the oil breaking down in the long run. It also salts the fries internally so you don't need to salt them as they come out unless you taste one and its not salty enough for you* Step 3: While the fires are soaking, begin heating the oil in a deep fryer (which is best because it gives more room for the fries to spread out) or a large skillet. Remove the french fries from the water and dry off with a paper towel. They don't have to be completely dry but just not soaked. You don't want the flour soggy. Step 4: Pour 1 cup of flour and 2 teaspoons of cornstarch into a ziploc bag. You can also add any other seasoning at this time if you want seasoned fries. Now add the potatoes in small batches (one to one and a half handfuls is plenty) tp the bag and shake until coated completely. Step 5: Add fries to hot oil and cook for approximately 4-6 minutes. You may cook them for longer if you want more crispiness. Allow to cool and enjoy. I hope this works for you as well as it works for me. Happy mylotting and good luck!

If you deep fry them they will become crispy. I love those fries but will bake them at home at 450 with a little bit of salt on them before still good.
