Cinco de Mayo party foods

I do alot of cooking. When I cook, I often make things out of scratch. We are having a party at my job for Cinco de Mayo, and I need to bring a dish to eat. I don't want to make something from scratch to take to work. Does anyone have any ideas for any festive dishes that I could bring that are fast and inexpensive?

I live down in Mexico, even they don't celebrate cinco de mayo like the gringos. But one special dish or like an appetizer, that's truly awesome is this: Line a cookie sheet with 4 layers of paper towels. get 20 large jalapenos slice them in half length wise, scoop out the pith and seeds, (don't rub your eyes), get a block of Philly cream cheese and fill each half with cheese, get a pound of bacon and wrap a slice, I usually use a half slice, around the whole thing and put a tooth pick in it to hold in place. Lay em all out on the cookie sheet. pre heat oven to 350 put the sheet in center of oven cook about 30 to 40 mins. til bacon is brown. drippings will be absorbed by the towels. remove and munch out. Their not hot like Jalapenos usually are but they are the BOMB! tdemex

That sounds simple, inexpensive, and yummy. Thanks for sharing. I love all the days where people bring in food to work, but it gets expensive. We seriously celebrate everything!
