What do you stuff your mushrooms with?

I am a huge fan of mushrooms and have been for a long time! My husband hates them. So I generally only make mushrooms when company comes over. One of my favorite ways to use mushrooms is to stuff them! Little pieces of pepperoni and mozzarella cheese stuffed into the mushroom cap is quite delicious! I have made these mushrooms many times, though
At restaurants, I often see mushrooms stuffed with seafood - especially crab. I am not a fan of seafood, so I tend to stay away from this. Another thing I have seen at restaurants is mushrooms stuffed with spinach and bread crumbs. They are quite tasty! I am afraid to try it though. How much spinach should I use? What kind of bread crumbs?
I am looking for some new ideas for stuffed mushrooms. What do you like in your mushrooms? Is there something special you stuff them with when you have company coming over?

I have never cooked stuffed mushrooms. I just salivate when I see stuffed mushrooms that someone else has cooked.

well i went to a fancy italian restaurant in december in the bahamas, and there i had stuffed mushrooms for starters. i think my sister told me there was pork in it, minced pork must be, along with something else. since you like cheese you might want to mix it up with cheese, after all ham and cheese it quite the delicacy :P
