Trying to cook with less meat

My family has been eating alot of red meat, and I'm trying to find recipes that have either chicken or fish in them, but most of them are the same old same old. Does anyone have any recipes that are alittle different from the norm? Also what is a good substitute for red meat? I heard that turkey is good, can you taste the difference? My husband says that you can and he said that he will know if I have replaced the red meat. Can anyone help?

It really depends on the person if they can taste the difference in ground beef vs. ground turkey. There are a few things that can you help you though. If you are making something that is primarily ground beef without any sauces, it is easiest to tell when it isnt beef! So for hamburgers and meatloafs, I would continue to use ground beef. At least until your husband agrees to something else! For things like hamburger helper or sloppy joes or meat in a lasagna, it is harder to tell the difference. There are so many other flavors going on that the flavor of the meat does get somewhat lost. I have noticed, though, that hamburger holds the flavor more strongly in tacos and sloppy joes than ground turkey does. Start by using 75% hamburger and 25% ground turkey. There will still be the flavor of the humburger very strongly - but you will have made it healthier by using the ground turkey as well. As time goes by and he gets more and more used to the ground turkey being part of the dish, change it to 50/50. Over time, you will be able to wean him off of ground beef completely for some dishes! Even 50/50 for things like tacos is much healthier than 100% ground beef! Another trick that I learned from the internet is to use mushrooms in with the ground meat. I know this sounds strange, and you would think it is completely noticable. It isnt at all! I tried this with my husband, he hates mushrooms. He didnt notice at all. Even when I told him, he said he still couldnt taste the difference! Chop up the mushrooms finely so that they are about the size of a humburger crumbles. When you brown the meat, cook the mushrooms with it. The fresh mushrooms will look like they are part of the ground beef! You cant see them or taste them. It will help make your meat go farther and it is much healthier! (The mushrooms dont have all of the fat and cholesterol like the meat.) Just remember to change only 1 thing at a time to see if he notices. Change things gradually as he gets used to different things. Replacing any ground beef with ground turkey has huge benefits, so even if you cant get away from the red meat completely, you will be doing something good for the health of you and your family!
