Can you help me find simple vegetarian recipe?

Dear all, I'm looking for easy to prepare yet taste good vegetarian recipe for my family.
My husband doesn't like vegetarian food and the idea of it because he's a meat lovers.
So I want to introduce tasty vegetarian food to him and my little daughters.
My daughters has no complaints for any food as far they are good.
I think being vegetarian is good. Besides, it is greener.

There is a very simple vegetarian dish called Hay stacks. It is a a version of a taco salad. Only it is made with whole pinto beans and no meat. It has corn chips lettus, grated cheese, hot pinto beans (as in cooked Hot) the you add the condiments as olives, sour cream, salsa, chopped tomatoes, chopped onions, or any thing else you want in a taco. You can put this together in any order you like or mix it up all together. We have it at church pot lucks quit often.

I'm sorry I should have checked to see where you are at. A taco is an americanized Mexican dish that is made from a corn meal or flour type flat bread called tortilla. They don't have any leavening in them. The corn tortilla is crisp and the flour one is soft. They are filled with the ingredients that I listed above.

My favorite is Asian-style stir-fried noodles. Simply grab any vegetables you have, stir fry them in a bit of soy sauce and sesame oil for a couple of minutes. Soak your hokkien noodles for a minute before throwing them into the pan as well. Add a little more soy if you need it and serve.
It takes five minutes, is very healthy for you, low calories, tastes great - and all vegetarian

I assume you dont mind things like cheese and egg, because you said vegetarian and not vegan?
Macaroni and cheese is always a hit! Who doesnt love that? I think that is on everyone's comfort food list.
Eggplant parmesan. Slice egglplant about 3/4 - 1 inch thick. Dip it in egg then in bread crumbs. Fry it for a bit in oil. Drain it. Put it in a baking dish. Top with sauce and cheese. Serve with your favorite pasta, if you want. Tastes delicious, and still has that meaty texture!
Make a chili without meat and see if he even notices!
