Layered Mexican Flair

Layered Mexican Flair To be eaten with tortilla chips or can be placed inside a flour tortilla and eaten that way. 1 small can whole kernel corn, drained 1 can re fried beans 1 can black beans, drained 1/2 cup diced onion 1 cup diced tomato 1 can Spanish rice 1 lb. package shredded BBQ chicken such as Lloyd's 1/2 cup salsa You will also need shredded cheese, guacamole and sour cream as condiments. In a medium bowl, mix the tomatoes, onions black beans and corn. Sit to the side. In a large square casserole dish layer the Spanish Rice, BBQ chicken, and re fried beans. Top with the tomato, corn, onion and black bean mixture. Top with salsa. Cover and warm in the microwave or oven just till heated. Remove the lid and add the cheese and return to oven till cheese is melted. On a large flour tortilla add this mixture and fold tortilla in half. Top with more cheese, sour cream and guacamole. Time to eat. I broke this down into 4 microwavable containers and carried it for lunch. I warmed the mix, added the sour cream, cheese and guacamole and ate it like nachos. It is delicious and easy. Need a little more spice? Add some fresh chopped cilantro and some chopped jalapeno peppers.

Hi Sweetie, I actually love to cook. Love to eat too, lol. My husband however is a very picky person. When he eats a burger it is meat and bread only. No soups, no salads, no Italian food, no Mexican food. The only veges he eats are baked or fried potatoes, black eye peas, and corn. It's insane! No cheese? Besides, Southern boys are known to loved the beans and cornbread. Not this one. So, I try to make something up I can take for lunch. I'm craving my special spaghetti. Everything but the kitchen sink goes into it so it doesn't get made often. A little expensive to make. But oh, so very, very good. I'll have to share that recipe some day.

OMG. Gotta go and get some Lloyds I know what we are having for dinner. Wow that is amazing thanks so much for this post. You just made my day as I sat here wondering what in the world to have for dinner.

You are quite welcome. There is a little Mexican restaraunt here that also has a small place set up in the mall in the food court. I got this idea after ordering a vegetarian fajita. I thought that adding the bbq chicken would just give it a bit more as well as the rice. You are going to love it.
