Cooking for a crowd

I find that when I have to cook for all my friends and family together I have more complications then if I just had a simple meal. My bread ends up too hard, the main course ends up a little over cooked or under cooked. I feel like sometimes I need to just think I am having a small meal and let people just surprise me with them showing up but then with my luck I would end up not cooking enough. I can't seem to win on this one.

Same here...quite a few months back I had invited my inlaws to my home for dinner...so including us there were about 10 people and I had planned a simple dinner of mixed rice, cottage cheese curry and mutton gravy, followed by ice-cream. Now I am usually adept at making all these at home but believe me, that day was a nightmare. The mixed rice was short of salt, the cottag cheese gravy was runny instead of a creamy thick and the mutton OMG...first of all, my pressure cooker was way too small for that quantity so I had to cook it in batches...and then one batch came out well enough, one batch was not tender enough and the last batch became so tender that the mutton cubes lost their shape I think its OK when we cook for ourselves in small quantities but for more people, I think I'll get it from takeaways.

Do you think maybe the problem is being distracted because you have so many people and your also focused on them being entertained while your trying to cook at the same time? Thanks for your response.

No, I think I am just not used to cooking for so many people, so I get the measurements and time wrong...maybe if I practise it for sometime, I'll eventually get it right and open a restaurant Oh and you are up and mylotting so early??!! Its now evening here in India and its amazing that its morning over there

i am the opposite. i always cook too much! i have trouble when i have to cook for 2. i have 5 kids and always have enjoyed cooking and entertaining. when someone comes to my house, invited or not there is always something to eat and plenty of it. if i don't have leftovers it is not normal.

I know leftovers are not common in our house, I usually cook quite a bit for the family but it seems like when I get a larger number then usual I can't seem to get the food I am fixing to turn out as well as if I was cooking on a regular day. Thanks for your response.
