Well , maybe just because it is an animal. Perhaps it just like we hate some smells or some other things. Actually, I think it is ok.

It could be because the cat likes the pine scent. It could also be that the scent interferes with the cat's sense of territory, and the cat is rolling around to re-mark the area with its body scent. In either case, you should do whatever you can to stop the behavior. Most conventional cleaning products, including pine-sol, include harsh chemicals which are not good for animals or people. If you must continue using chemical cleaners, you should shut the cat in another room while the floor is being cleaned and until the floor is completely 100% dry. This will reduce the chance that the chemicals will end up the cat's fur. A better alternative, though, is to switch to a natural cleaner that doesn't contain harmful chemicals. These cleaners aren't always expensive. In fact, one of the cheapest, easiest, and safest cleaners is vinegar. Just add a good amount of vinegar to a bucket of hot water for mopping, and mop the floor with it. Vinegar is good for removing stains and grease, and it also is a mild disinfectant. It may not smell great, but the smell goes away pretty quickly. You can also add some essential oil to make a better smell. Tea tree oil is a good choice because it is also disinfecting, and has a somewhat minty smell.

Pine sol isn't real good for the cats, but some cats seem to just go crazy with the smell. If the floor has been rinsed it isn't AS bad, but your best bet is to try and keep her from doing it.

Cats love the scent of pine, it's an ingredient in some catnips, so I'm sure that's why your cat is falling all over itself, literally!
