chicken fillets

looking for some ideas for chicken fillets. I am a big chicken fan, using it in stir fries, fried rice, on the bbq and in tacos. Nothing better than sealing fillets in olive oil then into the oven to finish them off, serving with a nice sauce and smashed potato. or steamed vegies. Can mylotters give me other ideas please.

I like all kinds of chicken recipes. That's all I really eat since I am allergic to beef. I like to make it with garlic salt and then put brown sugar on top. It's awesome. Also coatin it in the instant mash potatoe mix is awesome. The bottom ends up cookig like mash potatoes. I have also heard that coating them in crushed gold fish is very good.

i think i will pass on the gold fish, haha. crushing potato crisps then crumbing the chicken is really nice too, thanks for your reply.

Mix a marinade of olive oil, chilli flakes, minced garlic, black pepper and parsley. One tablespoon of oil is enough for 4 - 5 thin fillets. Coat chicken in marinade, and leave in the fridge for at least an hour. Tear off a piece of kitchen foil large enough to hold the chicken, then twist the foil together at the corners to stop oil leaking out. Cook like this on the barbecue until chicken goes really white, then finish off on the coals. Cooked this way, the chicken stays moist. If you don't want to barbecue, it works just as well in a frying pan on the hob.
