Soups can be very fancy and with lots of work but there are lots of easy to make soups for everyday eating. I like soups, specially in winter. And I make them of just about anything I see laying around in my kitchen. All you need is a broth (be it real broth or cube of some sort), veggies (whatever you have at hand but I love to add leeks to many of my soups). You boil the veggies (carrots, tomatoes, potatoes, squatch, zuchinni, spinach, beans, corn)and when they are cooked put then in the blender. If you want a cream, add cream or milk. If you want a soup with bits of veggies, omit the blender and dice the veggies. If you have a very good broth (chicken for instance) matbe you will only want to add some rice and an egg at the end.

You can make soup out of just about anything. If you want meat soup (or stew), you can use beef, chicken, pork, lamb, turkey, fish... what did I leave out? Put that in water and start to cook it, then add grains in the form of rice or barley or pasta, then add whatever vegetables you like and whatever spices go with the meat. For beef, that can be almost anything. For poultry, try lemon pepper, sage, rosemary or something like that. Let it all cook together until everything is done. You can taste it and add whatever spices you think it needs. Salt and pepper is good for almost anything. You can also add tomato sauce or Worcestershire sauce or even barbecue sauce. Don't add very much and taste it to make sure it's the flavor you're after. Try it! It's not hard at all.

I really like making soups in my crockpot during the cooler months. Here is a favorite of ours. Taco Soup with Black Beans 1 lb. ground beef, browned and drained. (I use ground venison when I have it.) 28 oz can crushed tomatoes can corn, undrained can black beans, undrained can red kidney beans, undrained 1 envelope dry Hidden Valley Ranch Dressing mix (store brand works fine) 1 envelope dry taco seasoning 1 small onion, chopped Optional, tortilla, or corn chips, shredded cheese, sour cream Combine all ingredients in slow cooker except optional. Cover. Cook on Low 4-6 hours. Garnish individual servings with chips, cheese, and sour cream. We serve with corn chips and cheese. If you don't have a slow-cooker I'm sure this would work on the stove top. Probably just simmer 30min to an hour.
