Have you tried to can squash or okra? Well, we were told it was difficult if not impossible to can squash, because it was so soft. We may be blonde, but we are not quitters, and yes, we did can the squash. Not soggy either. Very good. We opened a jar today, just to try them out. The okra everyone says, comes out slimy. We did that too. Not slimy, but very good. I think we have come up with a very good recipe on both of those things.

I am glad you tried something no matter what everyone else said! Way to go!! I used to can okra, but usually only pickled it. It was always very good and we ate all of it!! I did can squash too, I guess because I didn't have anyone tell me I was not supposed to! I canned yellow squash a lot. I added onion to it and it was always good. Then the green squash I put some tomatoes and onions in with the sliced squash. It always was very good and we ate it all! It was geat on toasted bread. It also made a super soup base!

Thanks so much. I will pass that information along to my sister. That is who i can with all the time. That squash and okra both came out very good. We opened a jar of each of them today for fathers day, then got busy and canned some catsup. We did tomato sauce yesterday.

I haven't canned catsup, but I've had some freinds who did it! I remember the days, I canned or froze about everything I could get my hands on when my kids were young! I tried stuff that no one else said could be done! It was very rewarding and fun too!
