Just replicated a restaurant idea, do others do that too?

The other evening in a taverna we had grilled octupos served on a balsamic dressing, I could identify the balasamic vinegar, olive oil and capers but there was something else in it too which give it a lovely sweetness against the octopus. Now I've just managed to replicate the taste of that sauce by mixing salt, balsamic and oil with a teaspoon of honey, delicious, and used it as a dressing on a green salad with raw mushrooms. It is so good to find a new taste and be able to reproduce it at home, do others do that too and can you find the missing ingredient as I did with the honey?

I am always doing that and I feel very proud of myself when I find the missing taste or I make it better. Just last week, some friends invited me to a peruvian restaurant where they served an incredible octopus appetizer. I asked the waiter for the sauces and he told me one was a mango jam and the other an onion chutney. Checked on onion chutneys in my cookbooks and ended making a relish with onion, tart apple,rice vinegar, honey and spices. It was out of this world!. It seems you love cooking as much as I do.

that sounds really good, i have never managed to do an onion chutney as well as the one I used to love in an Indian restaurant so maybe you could pass on your onion chutney recipe marguicha. Yes it seems we both enjoy cooking.

sounds good, I will try it, have everything here except rice vinegar. I was given a lot of fish yesterday by a local fisherman and think that your chutney would be good on the side with fish.
