I don't think you can ever change anybody - men or women. He might mellow with age though :)

Do NOT waste your time trying to change someone. The only way he is going to change at ALL is if he is suddenly wanting to. Trying will only bring you lots of stress and heartache. I know from experience. ;(

While this may be what you want it is best if you do not try to change anyone. Why do you love him anyway? Does he love you honestly? Ask yourself these questions and maybe you will find the answer to your problem.

For a person, it's very hard to change. But if he really loves you, you have some chances.

While I can say that YES it is possible to change a man, they have to WANT to change, and be ABLE to change, by that, I mean don't take a guy who is addicted to video games and tell them to choose between you or the games, your setting yourself up for failure there. However, is it really fair to him, or yourself to want to make great changes to him?

'Sweet and loving' sounds like personality traits. Very hard to change on a person.
