I par boil my ribs first in apple juice. Just put them in a pot and fill with juice until it covers the meat. I also add a little salt, pepper and red pepper flakes. Then I turn it on until the juice begins to boil. I turn them off then put in pan for oven or grill and cook as usual. They cook faster but still stay moist!

I always boil my for a while before i put them in the oven or on the grill, that helps to keep them tender.

The motto from the Food Network channel is.. slow and low. Cook them on a low heat for a longer time. Covering keeps the moisture in to make a more tender meat. But that 's as far as I can help you... maybe go to Food Network site and lookaround. THey have lots of cooks and chefs there and I amsure that is probably a common question... check Bobby Flay or Paula Deene... those two know what's going on!

You could try par boiling them. My father says that is the way to make them tender before you cook them in the oven.
