Grilling Veggies

I love grilled veggies but am looking for some new ideas for marinades and glazes for them. ANy one?

I love to grill red shepherd peppers, zucchini, eggplant, onions, and tomato. When they are all done, I peel and seed the peppers and tomatoes, cut everything up into bite size pieces and then add olive oil, basalmic vinegar, salt and pepper. It takes so good and even the next day cold too.

Thanks I do something just like that except I marinate the veggies in almost exact mixture then cook...great minds.

I find that if you marinate the veggies first it does add some flavour but the grill (if it is an outdoor bbq) flavour will overpower the marinade. If you add the vinegar and oil afterwards instead you get a more powerful vinagrette flavour.

See I put the veggies in overnight for a good long soak so the smoke doesn't over power too much. On bigger pieces I also punch little holes with a fork to let more of the marinade in.
