hello there! my adobo is very simple...i just like it with lots of garlic! i boil it first with soysauce, vinegar, pepper, salt to taste and sometimes i still use msg and garlic. then after boiling i fried some garlic and fry a little the meats and then put its sauce...boil until tender. sometimes i put laurel leaves sometimes not.

This is the secret ingredient my husband's cousin place in his adobo -- oyster sauce. Aside from the usual ingredients like vinegar, soy sauce and spices, teh oyster sauce thickens the sauce and makes it yummier.

oyster sauce is salty just like soy but has a different flavor. i'll try to put some on mine.

I put a little sugar for my adobo only in the absence of pineapple juice. I also make sure that my adobo will have good amount of garlic and just a little amount of Laurel. I cook my adobo in low-heat or low-fire without frequently stirring the meat. I have made a lot of Adobo recipe variations. One of the best I have so far made is the recipe with which I added peeled chopped tomatoes rather than using vinegar.

We also put sugar in our Adobo sometimes we put laurel and ginger. Some put egg in their adobo. Some fried their adobo or put oil when they prefer to reduce the broth I prefer chicken adobo than pork because I like the taste of it.

sometimes i put pineapple chunks in it. It's good you should try it. I also put a pinch or sugar to balance the taste so it won't be too salty. I also love putting (saba)bananas and sweet potatoes, a generous amount of garlic and pepper... oh my now i'm hungry.

My mom always put sugar in her adobo. I think it has something to do about vinegar and soy sauce, I am not really sure. Her adobo is closed to being dry because she want the sauce to be thick unlike some adobo where there are too much sauce in it.

I love adobo. Like yourself, I also put sugar, even brown sugar on my adobo. I caramelized the sugar with the meat. It tastes really good. I love it.
