So tonight I wanted something different, quick, and easy. I had chicken, pineapples, rice, and other basic ingredients in my pantry & refrigerator so I browsed the recipe sites and found a basic recipe for pineapple chicken, and then added my own touches. This recipe feeds a family of 4. Here's what you will need 4 boneless skinless chicken per person 1 20oz can of pineapple (save the juice) 1 packet of Lipton Onion soup mix 1/4 cup Soy Sauce 1/4 cup Brown Sugar 1 tablespoon Minced Garlic 1 cup water Serve over rice (about 1/2 cup per person) First cook the chicken until done all the way through. Next cut it into strips or chunks. Mix your brown sugar, soy sauce, and garlic into your pineapple juice, stir well. Then place your chicken back into your skillet and pour pineapple juice mixture over chicken. Let simmer about 5 mins. While that is simmering mix Lipton Onion Soup mix in water, then pour it into the skillet with the chicken. Let simmer about 10 mins then add pineapple. I used pineapple chunks, but I'm sure that you can use whatever you have on hand. Let simmer for about 10 to 15 more mins. While that is simmering cook your rice. Voila! You have a simple & delicious dinner.

Hi there! Even i love pineapple chicken for the reason that pineapple adds sweetness to the chicken dish. I have tried quite a variety of it and the recipe you have shared also seems to be a deicious one. If you are looking for something different in the same, give this pineapple chicken recipe a try next time you think of making it - http://www.ifood.tv/recipe/pineapple_chicken This is a stir-fried recipe and is made similar to orange chicken. Give it a try for sure! Also, here is an extensive list of pineapple chicken recipes - http://www.ifood.tv/network/pineapple_chicken/recipes They have very good variety and one recipe is truly diverse from the other.

I had tried something similar to that in my crock-pot however it was called Hawaiian chicken and no one but me really liked it. I guess I'll have to stick with pineapple either eaten plain, in a fruit salad, or in jello *LOL*
