They aren't pumpkins, they're squash!

I thought I planted butternut squash but then thought they were pumpkins since the plants were so huge. Now I see it's crookneck squash. My neighbor told me to pick them at about 6" long so they would be tender but they're all seeds! Hardly any flesh to eat in these. I picked one that was about a foot long, same thing. What use are these?! I'm really frustrated. Am I doing something wrong, picking too early or too late?
