What do you like in your chicken noodle soup?

I usually like to start w/ your basic pkg of chicken (whatever I have on hand, brst, whole ect) cook w/ carrots, debone chicken & return, then add celery & long grain rice & noodles. Hubby hates when I put extras in there. He hates that I put everything in it & says it doesn't count as chicken noodle because of the extras. Especially potatoes! However, he loooooves it if I take the time to make home made egg noodles wich are good but it makes left overs super thick. I do like to put in: potatoes, dried beans, barley, green beans.... really just whatever we have handy or is looking kinda shabby veggie wise. Or I've heard of the term everything but the kitchen sink style of soup.

all i put in my chicken noodle soup is the noodles, the chicken, celery, carrots, and the broth.

When i make my soup, it is different all the time. I make it from just the chicken carrot's, celery, and noodles, I also like putting cabbage in it. But like you sometimes it ends up with everything in it. The only thing i do not like in chicken soup is potatoes, so i do not ever put them in it.

What no love for potatoes in your soup? it's good! I agree w/ using what you have on hand with it, why not? No point in wasting it if we don't need to, espeically if it's on the cusp of going south.

No Potatoes in my soup...Trying to stay away from the carbs in them..I am diabetic and the starches from them turn to sugar. so i watch eating them.

I wouldn't mind it if I was feeling too lazy to make it from scratch. But it's too salty for my taste.

It is a bit salty, but what I do is pour from the can to the bowl, and then drain most all the juice out... then add a ittle bit of water to make the broth.

I've never made homemade chicken noodle soup but it sounds good the way you make it! I would put in some chopped celery, though. I usually throw all my leftovers in the crockpot and that's my soup. This week I have zucchini soup with potatoes and meatballs!

I"d love to hide some Zucchini in soup but dh will have a fit & no one but me will eat it unless they don't know it's in there ;0) I used to make a spicy cucumber soup when I was a teenager but I never have enough of them on hand (or on a good sale) plus if the kids won't eat it there's not point in making it usually.

Hi snugglebunnies, I like to make a clear clear chicken stock and just add some very fine noodles to it. The soup part is so easy to make, I just put the carcass in the pan whole and throw in halved but unpeeled onion, celery, carrots, whatever is on hand to give flavour veg wise. A handful of peppercorns and some herbs if I fancy. Then boil and simmer and drain so the flavours are all there but the soup itself is clear. It was so easy when I realised you don't need to peel and slice the vegs, the flavours are still released without doing this.

I"m lazy I don't peel my carrots. I don't see the point if I scrub them why bother w/ the extra step. Peppercorns? That's an idea to zip it up a lil bit
