Eggplant Parmsean

Tonight I made this for the first time and I have to admit I wished I had learned how to make it sooner. It is soooo easy and sooo good. And I am not a vegan, tree hugging hippy or anything and I love my red meat. But I can honestly say I like the consistency of this veggie and can forsee me using it in other italian dishes like lasagna.
What do you use eggplant in beside the dishes mentioned?

Well I AM vegetarian, but some excellent dishes that include eggplant, aside from eggplant parmesan (which I also LOVE) are ratatouille, which is delicious and easy to make, and a bit like stewed vegetables if you've never had it, and simple roasted eggplant (perhaps with onions and garlic) is also good.
You might also like something called Mousakka (not sure of the spelling)... It traditionally uses lamb or other ground meat, but I make an eggplant version with tomatoes, onions, and rice or other grain layered between slices of eggplant with a Parmesan cheese topping (bechamel). It's actually very easy to prepare but this dish can be time consuming.
Oh -- and eggplant dip with pita crisps is excellent and easy as well! Hope you like some of these recipes, you can look them up online and make them however is pleasing to you.
