Food Shopping for One

Is it me or is it becoming increasingly more difficult to food shop for one. If I want to buy a chicken breast in the supermarket it inevitably comes packaged in a minimum of 2 portions. A tin of chopped tomatoes is always more than enough for one and jars of pasta sauce are made for a meal for 4. If I do find a product where it comes in a decent size with enough for one it is always far more expensive. I could go on with the likes of sausages, minced beef, pork chops they all come packaged for more than one. The only thing which is aimed at the single person is ready-meals which are usually not enough for one and taste less than great. It’s as if the shops don’t believe that single people can cook or want to.
Does anyone else find that food shopping for one gets continually harder or is it just me?

If you go and shopping for reasy-made meals for one then it is extremely expensive. It seems like all the different food companies are on to a good thing - fromt their point of view
I very, very rarely buy ready made and prefer to buy and cook for four and then freeze. That means that I have lots of things always ready and loads more free time - and something available if some one arrives. I never buy the smaller packages of anything because they are so much more expensive than larger sizes. Buy the things you use the most when they are on special offer and prepare them, freeze them and then you get more time for Lotting too

Hi mysdianait many thanks for your response. I try to avoid ready meals like the plague as they are so over priced and taste awful.
I've asked this question in my response to Sandra but will ask it here as well. How long can you keep stuff frozen for after you make them? I was always wary of making a big pot of casserole and then freezing part as I never knew how long it was safe to keep frozen for and hen I use to bulk cook I would find stuff I had made in my freezer months after I had made them.

I am no expert on the matter but three months is my limit. Things never stay in the freezer that long anyway here but if they did I would get rid of them.

Many thanks. I was always very cautious and would never had considered keeping anything frozen for more than 4 - 6 weeks. At least next time I go shopping I can bulk buy a bit rather than searching out for those illusive single portions.

Why don't you save the other half for other night dinner? Just put them back to the freezer after you take out one of the meat. I think it is the easiest way to answer your question.
For vegetables, they mihgt not last as long as meat. So you need to be selective to pick some veggies that you can finish it by yourself or they can be kept for couple more days, for example, brocoli.
