I ate my garden!

I started with a simple salad of leaf lettuce and cherry tomatoes while I was waiting for the main course to cook... freshly dug potatoes, fingerling carrots and yellow wax beans. Yum! What did you have for supper today?

I was so excited to have our first garden this year but we did forget to plant a few things. We will NOT forget next year. Lettuce is one thing we forgot and squash is another. I have been eating my garden too though and it's awesome. I planted strawberries in a raised bed and had strawberries two weeks before anyone else in our area, that was pretty cool and totally by accident. So we are planting some strawberries in our regular garden for next year. They will ripen at the normal time and the ones in the raised beds will ripen two weeks earlier so we should have strawberries for more than a month next year. We have some of our tomato varieties ripening now and they are so tasty. I also planted some potatoes in containers and we are enjoying those now along with yellow beans and peas. We are loving our little backyard garden so much that we are tripling it's size for next year and will plant a whole lot more so we can share with friends and even try canning some stuff.

That's great! I had put some lettuce seeds in a pot of radishes... I figured as I pulled the radishes, the lettuce would have more room to grow. Well, the radishes didn't amount to much and the lettuce never came up at all... That is, until just last week! Don't know why the lettuce took so long to germinate.

the other day, Sunday maybe, the roomie cooked some chicken in the crock pot Monday I skimmed the fat off the top to get out a little chicken to have for dinner and today we deboned and took out the skin of the chicken and separated the meat into serving sized portions and so I cooked some frozen veggies and chicken for dinner, had a little cereal for my carb and still need a peice of fruit.

For supper I cooked mashed potatoes, pork chops with mushroom gravy and the good fancy mixed frozen vegetables. I never eat dessert but I gave my brother in law a big piece of spice cake and he had his tea as usual. That's it that's all. There's nothing like fresh garden vegetables but I need to buy mine at farmers garden. Not the same as home grown as far as I'm concerned.

Yum, that does sound delicious. I'm very impressed! I love fresh vegetables right out of the garden. Ours got a late start, so I'm not even sure if we'll have any by the time the first cold spell arrives in October. But I will keep watering it and hoping for the best. I haven't had dinner, but it's funny that you ask because I was just thinking that my refrigerator was empty, and I am either going to have to go out to eat or pick up something at the store last minute. I don't mind doing that so much. Mainly because everything is extremely fresh when I do.
