It sounds like you are into apples in a big way! I used to have a big apple tree in the garden where I lived. I used to freeze some, and store some. I love apple buns and apple crumble. I only have a very small apple tree where I live now, so am lucky to get 5 or 6 apples from it, but I have some neighbours who happily share some of theirs'.

2 cooking apples,8oz self-raising flour,3oz butter or margarine,3oz sugar and 1 beaten egg. Core and dice apples. Rub butter into marge until mixture is like crumbs, then add remaining ingredients and mix well. Divide into about 12 dollops of mixture and place onto a greased baking sheet. Bake in oven at 180c for about 20-25 mins. Allow to cool slightly before transferring to a wire rack.
This is roughly how I make them, but it varies a bit every time!

Sorry, that should have said 'rub butter or marge into flour until mixture is crumbly'.
