What's the best apple and method to make apple juice?

I'm going to try and put up some apple juice this year, but I'm not quite sure how to go about doing so. I've been told to cook the apples some, juice them, sugar them to taste, and then hot pack them. I'm just not sure what kinds of apples are best to use, and the best method.
Any ideas?

I;ve never tried to make any kind of apple products. I have seen apple butter made before though. I have also seen apple cider being made. I would love to try to make cider sometime. It is so delicious to drink and is getting expensive in the store.
