lean meats

It is said eating chicken and fish is better than eating red meat.But what do you feel is the ideal quantity to be consumed if a person is not to be burdened with high cholesterol?I've recently read somewhere that the day you have egg for breakfast you've already consumed a certain amount of food high in cholesterol hence you should restrict your content of meat in your other meals in the day.Do give your valuable advise.
