Cherries - Any Ideas?

I have recently moved out to my house in Bulgaria and I have 3 cherry trees on my plot. I harvested as many as I could. I gave a lot to neighbours, made 40 litres of cherry wine and ate tons fresh! Any ideas what to do with them? They can't be frozen as they are the sweet variety. It was such a shame not to be able to use them all and see them go to waste. Any suggestions on what to do with bucket loads of cherries?

each fall, a local grocery stores sells buckets (10 pounds) of cherries and my mother in law bought us one. we put them in the freezer and are hoping to make some cherry pies (YUM!) with the cherries!
