Chinese batter recipe

I really want to try and replicate the batter that you get in chinese restaurants. Whenever my husband and I go out for chinese we will have the breaded sweet and sour chicken. The batter that covers the dish is crispy and light and incredibly tasty. I have not been able to get anything close to this at home. I think maybe the oil it is fried in makes a differnce too. Does anyone know what the recipe is for this? If you do do you know what oil the restaurants use to fry it in?
