What is the best way to cook/prepare chicken kabobs?

I have tried using white meaty sections of chicken for chicken kabobs and they were dry after bajing for about 30 mins.so i am wondering was it the seasoning,the bakingtime or should I have used boneless thighs instead to make these kabobs? I am looking for ways to encourage my small children to eat and figured this may be one but I need to get nice juicy chicken other wise will be in the "same boat".

The best way I've found is to let them marinade in cooking oil and I use tereaki (sp) sauce,I let them sit in that for an hour or two, but since things cook at different lengths I put them on a separate skewer than the veggies! The veggies I just brush on the Teriaki and oil mixture while I'm grilling them and serve it all over rice! tdemex

Thanks, Interesting, what will the oil do for the chicken? I know when baking turkey it is recommended to put butter which gives it a brown crisp skin.Also I know that fat(butter) makes foods soft so is that the reason for the oil? I will certainly try this although I like to mix my own seasonings -many herbs,garlic,onions,lemon juice/apple juice salt,pepper.
