Today I have baked a lemon meringue pie. I only have a large pie dish and my husband and I will not be able to eat all of this before its no good. Can I freeze this type of dessert? If so what do I do when I want to eat it again, should I left it defrost at room temperature and then heat up in a microwave? I am not sure how it all works with freezing things I have cooked. I have bought this type of dessert frozen before but I do not know if they are fully cooked or not. Anyone know if its ok to freeze this?

Yes, that kind of pie can be frozen. Some others not so good.

The meringue will get tough if you freeze the pie. I don't think a lemon pie will freeze well as it weeps as it set and will probably loose it firmness as it thaws out.
