In my country, the eggs were preserved in salt. They were called "itlog na pula" or red egg.We eat it with rice and tomatoes. Sometimes, some people also garnish it with shredded green mango. For flavoring, and added garnish, salted egg is also placed on top of rice cakes we call "bibingka" and rice buns that we call puto. Have a taste of it. It is very yummy!

It's a salted egg duck and here in the States (or California, I guess, I don't really know about other states), they have white as well. They have them in containers labeled salted duck eggs so people don't get confused. According to my parents, the red-color ones taste better and are saltier. But I can't really tell the difference. I grew up with the white ones so when i go to the asian market- i get the white ones.

Wow!thanks for telling me that there was also white colored salted egg in other countries. here in the Philippines, it was only red for identification purposes

yeah, and i also find it good as a siding for adobo... i remember buying 'binalot sa dahon ng saging'(wrapped with banana leaves) where there is rice, adobo & salted egg with tomato! its so good! and in our house we also like it for breakfast along with fried rice and fried 'tuyo'
