Muffins... do you have a recipe for me?

I love muffins (English muffins in the US, muffins in the UK). I alwys buy them when I'm in the US or the UK but unfortunately they are not available in Iceland. Does anyone have a recipe for me? I was reading another discussion with recipes and got so hungry. Is it breakfast time soon? (10:40pm)

My favorite are blueberry muffins and chocolate chip muffins. But, Im sorry, I dont have a recipe...I dont have time to make them from scratch and buy either ready made muffins, or boxed mixes...lol...sorry!

Thank you. I'm looking for a recipe for the bread like muffins, my favourite brand in the US was Thomas's English muffins. I also like the cake like muffins but they don't go as well with bacon and eggs lol.

Here's a muffin recipe which my sister-in-law served a number of years back and we all enjoyed so much: Granny's Cranberry Muffins 3/4 c. cranberries, halved 1/2 c. powdered sugar 2 c. flour 3 tsp. baking powder 1/2 tsp. salt 1/4 c. sugar 1 egg, well beaten 1 c. milk 4 tbsp. melted shortening zest of 1 orange 1. Preheat oven to 375 deg. Grease muffin pans. 2. Mix cranberries and powdered sugar well. 3. Sift dry ingredients. 4. Add egg, milk & shortening to dry ingredients 5. Fold in cranberries 6. Fill muffin cups 2/3 full. 7. Bake 30 - 35 minutes Of course, this is a basic muffin recipe, so you could add other fruits instead of cranberries. They just give the muffins a nice tang. My sister-in-law and brother owned a B&B for years and baked lots of different kinds of muffins. Those sound delicious although not the English muffins I was looking for. Cranberry muffins sound like something that would be nice on the breakfast table during Christmas. Is it ok to use frozen cranberries? Those are the only kind we can get here.

I have tried that but I always end up with thousands of links telling me where I can buy them. I did get a recipe for muffins online a few years ago but it wasn't what I was looking for, tasted horrible. I was hoping someone on here might have a good one and it's nicer to get the recipe directly from someone who uses it than on the inernet.

English Muffins Recipes Ingredients: 450 grams (3 cups) Untreated Bread Flour or any combination of other flours 2 teaspoons Dry active Yeast 1 1/2 teaspoon salt 1 1/2 teaspoon Natural Improver 1 teaspoon sugar 350 milliliters warm water Directions:Measure the dry ingredients into a bowl. Add any flavourings (such as polenta to make corn flavoured pita that are great as soft taco shells), then most of the warm water. Mix thoroughly taking great care not to make the dough too wet. To speed up the rising and ensure that the dough is not too moist you can scrape the unrisen dough out of the bowl onto a well floured board and knead for approximately 30 seconds, but it is not necessary. When fully mixed cover the dough with freezer wrap and place the bowl somewhere warm to rise, until double in size. Tip the dough out onto a floured board and shape until smooth. Divide the dough evenly into 12 pieces and shape each into smooth round balls. Pita can be made larger or smaller just by dividing the dough into different numbers of pieces. Flatten the balls of dough to about 3/4" thick, set aside on a lightly floured surface to rise to double in size (usually about 15-20 mins). Heat a frying pan or electric frypan to a medium heat and lightly oil (oil may not be needed in a good nonstick pan). Cook each muffin for 5-6 minutes each side, longer if very fat. They can then be split and slowly toasted or can be used as hamburger buns. Note: muffins taste less floury if you brush off the flour, and dust with semolina before cooking.
