i would say gears of war 2 is gruesome game to play
just so much blood and limbs flying in multiplayer

Soldier of fortune is quiet violent but I'm telling you some more violent games:
1. Manhunt
2. Kingpin life of crime
3. The Punisher
4. Doom 3
Most violent among them is Manhunt in my opinion.
