It is very common that after Christmas and New Year celebrations there are left over foods that should be given attention. Usually when there are lots of rice, we cooked it as "sinangag" or just cooked it with butter, garlic and onions then mixed with seasoning, chicken, hotdog. For lechon or roasted porl/pig, we usually cooked it with vinegar and laurel.

This is some three days after your discussion. I imagine you've already ate the left overs, and I hope you enjoyed them. There is plenty that can be done to just plain meat without seasoning, but if it's seasoned I don't know that anything can be done. Of course basic foods like turkey, chicken and ham can be put in a biscuit or a sandwich to make a nice little snack or lunch for the days after the holiday. You must live in a Warm Country to be going to the beach so soon after the Holidays. Have a wonderful day, and I hope you enjoyed your holidays!
